In 2023, Lindsey Schulz founded Oat & Toast, a breakfast cart dedicated to serving real, healthy food like oatmeal bowls and toast free of added sugars and seed oils. Her commitment to quality and authenticity quickly made the cart a beloved spot in Fargo, known for its aesthetic packaging and local ingredients. Built with the help of What Todd Does Construction, Lindsey’s father, and many others, the unique cart adds to the charm and appeal of Oat & Toast. Lindsey continues to delight the community with delicious, wholesome breakfasts, transforming how they view food. 🥣

Caliton Ntahompagaze, an immigrant from Burundi, has been a resident of the F/M community since 2005 and is a founding member of the New Roots Farm Incubator Cooperative. Operating under the name Caliton’s Family Farm, he markets a wide range of vegetables with a strong focus on African eggplant as part of the New Roots “Room to Grow” program. Prairie Rose Farm provides shared land and equipment to support his learning and the expansion of his farm business. Caliton’s dedication to farming and community integration highlights the success of the New Roots initiative. 🥒
